Lunch: Corned Beef and Alvacado Sandwich in Romaine Lettuce
Dinner: Roasted Chicken and Broccoli and Cauliflower mix steamed
The roast chicken turned out SOOOO good. I used the 'Set-it and forget it' rotisserie from Ron Popeal.
Also, I have all my meals for breakfast for the week prepared ahead of time. I scrambled eggs with Portobello mushrooms and cooked a bunch of bacon. I can reheat in the mornings so I have a more substantial breakfast than a shake. I also have already cooked roast chicken and prime rib in the freezer / refrigerator for dinners during the week!
Snack: 1/4 cup Blackberries
